Those of us behind the bar are fascinated by what goes on in the Food Dance kitchen. We love to observe and ask questions of our talented back of house team, and as we greatly respect both classic and innovative culinary techniques, we keep in mind the chemistry and balance essential to cooking when crafting cocktails. We strive to be liquid chefs, using the incredibly fresh, local, seasonal ingredients and interesting spirits available to us.
Currently, you’ll see us barrel aging and infusing spirits with everything from fruits, nuts, herbs, roots and vegetables to smoke, tea and various botanicals. And we love pickled things. We’re just going to pickle everything we can get our hands on, so you may just find something tasty garnishing the next cocktail you order.
